How long can i keep it wrapped in foil with towels in a cooler?? I am expecting it to be ready around 4-5 AM and looking to eat it around 10-11 AM. I am making it for a tailgate this weekend.
Thanks in advance for any advice.

5-6 hours would not scare me.

I've had one on for 6 hours. Just made sure there was little or no air space in the cooler.

I think you'll be fine. Here's the best information that you will probably find on the subject: http://www.nakedwhiz.com/coolerholding.htm

A lot will depend on the ambient outside temperature and the quality of your cooler. Try and put the meat in a size cooler that is just big enough to fit your boston butts.

like Hoss said, 5 to 6 hrs, i have gone 6hrs several several times! i usually go atleast 3-4 everytime. but 6 doesnt scare me. u should be fine, just wrap well and insulate well.

I put an empty milk bottle full of the hottest water I can get out of my tap to preheat the cooler, then 'recharge' when I put the butt in. Helps keep the meat from cooling down into the 40-140 danger zone too soon.
