...I followed the advice of all the experienced ones. Chuck Eye steak $3.99/lb. First try. Hot water bath for 45 minutes with Montreal seasoning, then seared 3 minutes per side on spider/CI. Waited for twice baked tater then finished at 400 until 138 internal.

Pretty darn good. Thanks for the advice on this piece of meat!
