A beautiful night for butt!
The weather here in the So. Cal. desert just couldn't be nicer tonight. Good, cuz I'm cooking 20 pounds of butt! Kalua style for the So. Cal. Fest on Saturday. I'm going to shred the 2 big ones before we leave home tomorrow, refridgerate overnight and reheat gently in the juices on the egg on Saturday. The small ones I will warm up whole and shred there, just to demonstrate how they were cooked. Trying out the dates I'll be serving too. I am excited but nervous, this is my first fest cook. Also have 9 cans of Spam to smoke!
