Pork Butt Rub - Need a recipe

If you're going to make your own, the basic rub is just 3 ingredients. 1 C brown sugar, 3/4 C canning salt (not iodized) and 2 Tbl of black pepper.

From there you can go in any direction you like. Standard additions would be 2 Tbl garlic granules, 1 tsp cayenne (just a touch of heat), 2 tsp dry mustard, 2 tsp sweet paprika, etc. etc. If I'm making my own, I often add ground allspice, cumin, cinnamon, lemon grass powder, and ginger. I mix it with a little butter, spread it on toast, and see how I like it.

Or, use the base, and add a couple Tbl of prepared chili powder mix (I like Mexcene) or, for a slightly more exotic touch, a couple Tbl of garam masala.

I also often use Dizzy Pig Dizzy Dust as a base, and add from there. Depends on what I'm serving as a side.

I prefer to do Chris Lilly's with injection... I get rave reviews on the pork. Do a google search and you'll get tons of hits. Good luck!
