Pulled Pork Nachos, Tonight\'s Cook

Pulled Pork Nachos
I made this with leftovers from a pork butt I cooked yesterday.
Here is what I did:
pulled pork
tortilla chips
shredded colby jack cheese (about 2 cups but use as much as you want)
sweet and hot banana peppers
BB-Q sauce (I use Sweet Baby Rays or Blue Front hot depending on my mood)
fresh cilantro
sour cream and guacamole
hot sauce
I set the egg for indirect (plate setter legs down) heated to 350degs. I layered the chips, pork, sauce and peppers on a metal pizza pan covered with foil. Then I dumped the cheese and topped with more peppers. I threw a chunk of apple wood in just before the cook. I baked the nachos for about 12 minutes or until golden brown. Cover with as much cilantro as like. I like a shot of hot sauce at the end. I like to serve with a little sour cream and guacamole. Made homemade coleslaw as a side. This is a great way to use up all the leftover pork butt. I can't wait for college football!!!! :woohoo:[img size=150][/img]
