I did these:
at 250* just like pork ribs in a 3-1-1 cook. Here they are plated:

It's odd...I'm constantly hearing that folks can't get the English-cut beef ribs like I did, but I can't seem to find any of the long-cut kind here, only the shorties. -
I just find it funny that the butcher calls them "short" ribs

I've done beef ribs last week and today. Last week, I foiled after a couple of hours and the temp spiked to 350° during the foil stage, but they were done (perfectly after 3 1/2 hrs. Did them again today and foiled after 3 hrs but they were done when I foiled them. Not nearly as meaty as the ones pictured, though. Disappointed with today's cook. Should have foiled them an hour earlier. What can I say... I fell asleep :(
