I cooked some'en: dueling chickens

Haven't had much time to do a proper all afternoon cook for the last 2 weeks with all the going on over the new pup but worked off graveyards yesterday so the time was right. First the important raws:
A nice blend of spice for the rub including ginger, cumman, onion and garlic powder, peprika, chilli powder, salt, cracked pepper and a bit of all spice.
These chickens came with necks but no heads. No need for a neck if you an't got a head so off it comes! :laugh: It's not a pretty picture but nothing like getting your hands into it by rubbing the bird down in EVOO, pulling the skin away from the breast and thighs so that the majority of the rub goes UNDER the skin. We all know that rub on the skin is pretty much a waist as far as flavor in the meet right?!
Cut lime in half and squeezed the juice under the skin from half and put the other half where the neck was. Note the OM has the whole top removed (OM=Old Millwalkie for the newbees who do not know what unemployment beer is!! )Wheather this lets extra moisture in the bird or not is everyones opinion but my birds get an OM inserted rectally every time....Can I say "rectally" on the forum??
Care to guess what happen to the chicken neck? 12 weeks and 31 lbs. In a year best leave HIS Eggs alone! :laugh:
Fired up the Medium and Small to 300 pit for a breast temp of 170. A little done for me but company don't like any pink in the joints.
Someone got a "Welcome to America" package while we were smoking!!
Some smashed potatoes:
And suppers ready. Jakes doing really well with all the commotion as expected. Working real hard with him and Andy so they do not feel left out. They were hear first and Auron will all ways have to wait his turn. Plate looks kind of lame for lack of food on it compaired to my normal glutton bowel but with two birds no one left hungry!
And just incase Doreen made a fresh Apple pie from apples off my Dads tree!

Haven't been on at the same time as you much but Norma told me about the dog. He is a beaut. Paws are pretty big. Do you know what his full grown weight should be? Nice birds too.

Thanks Steve. My forum time has been at a premium as well with all the research on dogs as well as now training clubs and such. Early in morning after work or b4 work are my forum time. Just took a little time today. His Dad wasn't that big. Looks to be mid 70's to 85 lbs. http://www.dogsport-kopp.de/71.html Mom about 70. Unless he slows down he'll beat that. All ready swapped him to adult food to slow his bone growth that can cause joint problems in large dogs.

I got Jake back in 1987 when I was in collage living in the Frat house. Birds been my constant companion since. Thank goodness he can't talk. I would be screwed!!! :laugh:

JL, I'm sure that you know more about feeding animals than me, yet some stuff in pup chow is needed, maybe a mix of the two. What brand are you using?

Great looking cook. Those birds sure look pretty that includes Jake.
The apple pie was a nice ending. However, now it looks like we need to make an apple pie. Looking isn't as good as tasting.

First 4 months they do need extra protien and such but large breed dogs such as working Shepherds bones will actuall grow to fast with to high of Ca and protien food. When this happens the bone and more important sockets grow faster than they can harden and the bone socket will "waller" out before it hardens causing hip dysplasia. Not to be confused with feeding a cheap non complete adult food. His parents and all his ansesters have been x rayed for dysplasia since the records were kept I know back to the early 70's and had to pass to be reg. with the German S.V so his hips SHOULD be good. Genetics offers no garantees and all you can do is try and load the dice in your favor! :pinch:
