"Dino Bone" Beef Ribs

Anyone done these with success? (not short ribs... big ones that one rib is a typical serving for the average human.)
How does this method sound?
Indirect cook @ 250
Membrane removed
Rub with DP Cow Lick
Smoke in a rib rack for about 2 hours.
Bend test for doneness.
Rest and get BGE good and hot
Put back on (direct) for a quick sear/char.
Rest
Divide into individual ribs
Top with cilantro chimichurri
How does this method sound?

Sounds perfect except for the 2 hours part. Figure on at least 4, probably closer to 5.

Good feedback on the cooktime...
I found one place online that said 2 hours, but several others are closer to the 4-6 time frame.
I will plan on 5-ish... -

I just did some this weekend that were very simple by comparison. Although I like the chimichurri idea. Great flavors there.
I have done beef ribs quite a few times and found that indirect @ 300 for about 2 to 2 1/2 hours is pretty close. When I tried to do longer times they just got too dry and jerky like.
