Montreal bagels, anyone?

After smoking my salmon, I had to. Had to make bagels. So, for my first bread on the egg, I was a bit scared. I had to micromanage the temperature, but hey, the results were just... amazing.
And guess what my breakfast was this morning?

The white square plates help a lot, though! They give a "pro" look, if you get my meaning... -
oh....my...god....!!!!!! next time fine chop some red onions and put them in the center of the bagel when you put them on the egg to cook.... as it rises and closes in the center they steam and get all tender! so so very good!!!

Very nice Isabelle, do you have a go-to recipe to share lease, did you steam them first? Two of my kids each spent four months working in Montreal/Laval few years ago. Fairmount and Schwartz's were must whenever we were there! I'm in Toronto.

You have to boil bagels, for about 30 seconds on each size, or else they will not have that chewy texture and will basically be small breads with a whole in the center...
The thing for Montreal's bagel is to boil them in a mixture of water and honey. That's the big secret. -
I'll have one (or two) Isabelle!
Now I know the difference between a New York bagel and a Montreal bagel.
