Norma picked up a huge roaster last night. I wanted to do it breast down. Too big for the chicken stand. Got the stand from the turkey fryer and tried to lift it by the legs. That wasn't happening so I tried skewers, that didn't work so I put ramekins under the breast.
Did my first egged rissoto. Heated the stock
Some pancetta,onion and garlic
Some arborio getting all shoogily in the oil and fat
A dose of white wine
The first round of hot stock and second and third
Some fresh herbs
Some fresh peas
Some Parmesano
Pulled it off the egg and rested
Chicken 160* in breast and 180* Thigh and leg
Sauteed some garlic and added spinach
Added some goat cheese to the hot spinach and served with the rice
The chicken, a la famiglia

The ramekins ended up full of deliciousness. I put some on the ciabattas and chicken and havarti. Can't wait for lunch tomorrow.
