Mini Egg Cooks - Question

Maggie Mini comes in handy when we want to cook a steak or a couple of hamburger patties but we've seen some very creative dishes cooked on Mini's over the years.
Could some of you offer up some suggestions for something cooked on the Mini along with set-ups.
Recipes and photos would be nice too.

Here's a whole chicken cooked on the Mini I used to own. Took out the fire ring so the lid would close. More of a hassle if anything, but it worked.

4lb roasts- chicken, beef or lamb. Fish steaks and filets. You'll notice a lot of the time I use my raised grid setup for the mini. I achieve indirect usually by putting foil on the lower grid (except with pizzas. The following are a good representation of (easy) cooks I've done on the mini. Also not shown here are Grilled shrimp (skewered) and grilled scallops.
oysters
Salmon filets ( stacked, skin side down)
boneless, stuffed leg of lamb
Pizza
Beef shoulder muscle
Salmon Steaks
Romaine
1.5- 2 lb Marinated Steak tips
Tenderloin steaks
my 2nd cook on the mini (check out the gaskets and the grid!) 3.5lb roast beef (I don't remember the cut} that smoke smelled goooood! -

I won a Mini at the Oklahoma City Eggfest and we're giving it to my brother-in-law in New Orleans to get him in on the fun of Egg'n. He is a pretty good cook so I'm looking forward to visting him.
Yes, we're giving him an "I'm an Egghead" shirt too. And maybe a jug of rum to help entertain his brother-in-law when I'm in town.
These examples will give him a great start.

I got a second fire ring in the mini for a raised grid setup, also helps to protect the gasket from excessive heat.

Thanks to everyone for the suggestions. There were 64 photos in all and each was good enough to show the Mini's versitility.
My plan is to print the photos and make sort of an album to go with the Mini Egg we're giving my brother-in-law in a few weeks. I want him to try Egg'n on his own without me being around. I think he will go slow at first but being the good cook that he is he may just jump right in with some of these dishes.

I do not own a camera but I do own 3 eggs with very few gadgets. Try this:
An eight once wheel of brie. Slice rind from one end(the circle), cover with pepper jelly. Get to room temperature. In the mean time get the egg to 300 degrees. Have a "soaked" plank of maple wood placed on the mini just before it starts to smoke add brie, as soon it starts to melt pull off and place on a baguette or whatever is your favorite artisan bread. Can't find any maple planks, just place a chunk of maple wood with the charcoal. When the wood starts to smoke, Use a small pizza pan and place the brie on it and same as above. -

Sounds really good. Gotta find some maple then go to the grocery store. Then fire up the Egg. Oh wait!!! It feels like 106° out there. I think I'll just unwrap a slice of Kraft sandwich slices and make me a tall rum'n coke for now.

just FYI my pizza setup - 8" stone wrapped in HD Aluminum foil set on the cooking grid, 3 smooth stones on top of that and Pizza stone on top of those stones.
My raised grid setup was done before the invention of the Woo Kim set up. It's just an extra mini grid with 3 bolts (I think 2.1/2" x 3/8").
