Pork Baby Back Ribs

1st time cooking baby back ribs. Set egg to 300 and read in the forum to cook for aprox 3hrs. after 1.5 hrs my temp probe says the meat is 150 deg. Do i need to cook longer until the meat shrinks up on the bone?

Most use the 'tong' test. Grab the rack by the end, with a pair of tongs and if they bend over at 90 degrees, your golden. If I had to guess at the internal temp, I'd say closer to 190+. Then sauce, if that's your plan and 20 minutes later, then chowdown.
