I decided to give Thirdeye's pastrami recipe a try this weekend. I started the rinse Thursday evening and changed the water 4X plus rinses. I put the rub on yesterday morning and starting smoking at 250 at 1:00PM today on the small with cherry rub. The mini had the loney & the small the pastrami...

Kim, that looks too good! It is a no fail recipe. Did my first one a month or so ago and will be doing another for the fiance's birthday next month. Pastrami and loney, you can't go wrong.

Kim, that is now on my short list of things to try. I think thirdeye's post had us all salivating and now this! I'm curing some bacon this week, but I'm going to make pastrami soon.

Beautiful, Kim. I haven't tried Thirdeye's method yet because my family's so insistent that I keep doing the "Charcuterie" method that is rapidly becoming their favorite thing off my Egg. I need to get my crust looking as good as yours, though...what do you use to crack your pepper and coriander?

I am going to try the Ruhlman recipe also...I have a mortar & pestle to crack spices, very handy.

I've tried to get a coating like that, but have probably been stymied by how my coffee grinder has been cracking the pepper. I need to go low-tech....thanks, Kim.
