Finally tried the duck and andoille gumbo this evening

This is outstanding - my traveling companion says maybe the best - I don't argue with her :unsure: Some potato salad on the side. Duck thigh and plenty andoille in the bowl.

Pulled a double shift at the Eggs on Sunday and just put some extra smoke on the crabs yesterday.

It is definitely winter time gumbo Clay - of course winter time is relative. When it gets in the 70s we are looking for gumbo - just temporarily turn the air conditioner down and there you have it.
Kinda like putting the heater on and driving with the top down on a convertible in the winter :blink: :unsure: :huh: -

On RFD tv yesterday there was a 30 min. cooking show. Lucy i think was the lady's name and she boiled crawfish. Well I did spend a winter in Eunice at a KOA campground. I ate so much local food including boiled crawfish. I know I could sit down by myself and eat 5 pounds of dem mud bugs by myself. I'm not a coon ass me but, would be proud if I was! :woohoo: -
