Flat iron steak

me and Gregg Jr. haven't cooked together in a while. Well......I broke him out for a high temp cook.
We seared a flat iron at 700 deg, both sides then a rest, then back on at about 500 for 4 mins each side.
Med to med well when I pulled it off. I gotta tell ya.....after a 10 minute rest and the slicing, that steak was heavenly. No pics sorry.
I poured Franks hot sauce on it and then used the BGE dry rub one gets when they purchase an egg. Good eats. Coupled with a fresh made salad, nothing beats this....'cept maybe some company to share with.
Next time I'll take pics. Everyone have a great week. :cheer:

I have a couple of flat irons marinating now. Never had one before so interested to see how they come out. My husband is missing his chewing teeth so steaks have to be really tender for him to eat.

I have found that a quick sear both sides, then a 10 minute rest with a temp drop, and back on for 2-5 mins each side works wonders on this cut.
I hope ur old man was able to eat theses steaks, they r always tender for me.
