Mr Toad's Pork Loin

We tried Mr. Toad's Pork Loin Saturday evening. I highly recommend it. We used chopped dried apricots, fresh nectarines, fresh granny smith apple and cashews and the fig preserves. I used Three Little Pigs Touch of Cherry rub, inside and outside. Pulled it off at 140, rested for 20 minutes. Awesome! I have always avoided pork loin because in the years before the egg, the pork was always too dry. We are definitely doing this recipe again. And it has many possible variations. Sorry I haven't gotten on the ball and started taking pictures. Have fun giving it a try.

yes the options for stuffing are endless and the nice thing about this recipe is the presentation at the table!
Since you don't have any visual aids for folks here's one I made.
Pork loin cut and jelly-rolled out and stuffed:
rolled up, tied with butcher's twine and bacon added for fun:
And after Mr Egg worked his magic:
