just pulled fork tender brisket and butt at 190 temp putting then in a cooler how long can they stay before they dry out

I left two 8.5 lb butts in my cooler (double wrapped in foil and then wrapped in towels) for eight hours yesterday and they were perfectly moist and juicy and still hot.
Not sure about briskets but I think I left my last one in foil resting for 2-3 hrs.
