Stuffed Peppers NOT!!!

I thought since it was a nasty day I may as well Egg.Started out to make stuffed Poblanos.Spinach,asagio stuffed chicken sausage and cream cheese.Simmered some onions and sausage in beer.Grilled the sausages,simmered again in beer.Roasted the peppers.When I tried to SKIN the peppers I discovered that was'nt gonna work so I chopped up a pepper and mixed it in the stuffing.Stuffed some jumbo pasta shells instead.Dusted with Swamp Venom and parsley,back on the egg to heat throughout,topped with cheddar and asagio at the end.NICE SAVE!

Not a bad use for the peppers. I just leave the skin on when I'm stuffing. Figured there would be loney in the shells. :laugh:

Hoss, after roasting your peppers put them in a ziplock baggie for an hour. This steams them and if you hold them under cool running tap water, the skins come off easily. 20 years of cooking Texas Competition Chili taught me a thing, or two :P

Thanks! I just threw em in a sink of water and well it did'nt work too well.The skins came off but the peppers were limp. :(

They looked a lot like that when I pullem but I threw them in a sink of water instead of putting them in a ziploc to steam.Oh well,live and learn. :laugh: Turned out for the best.

No DUMBASS there buddy, I've watched you in action for too long. Your the real deal when it comes to cooking. I'll give you one more example and that is the quail dinner you cooked for your Dad, you didn't even break a sweat! You keep pulling rabbits out of your hat when ever they are needed and that takes SKILL.

They look really great!! Hate to hear the sink trick didn't work for you. I feel bad. Never had a problem with them being mushy at all. I'm thinking its my fish fryer. I blister them on it and do it at a super high temp. Only about a min or less for the whole pepper and its blistered good. That quick rotationg it around may JUST blister the skin and not really cook the pepper much breaking down the cell walls alowing it to absorbe the water in the sink. When I used to do them on the Egg it took longer than that most of the time. Just thinking. Also only leave them in there about 2 or 3 min b4 I started removing skin. Cook still looks great and sorry the sink didn't work out like it should.
