45 Ibs of butts on XL

I just fired up 45 pounds of butts on ‘Mama’ my XL for a charity tomorrow.
I use beer butt chicken stands in between the butts for airflow and more bark. I also like to clip my pit probe right in the middle of the action.
My partner Mr. Stoker will take the midnight shift.

Best use of the chicken stands I have seen so far, pit probe holder.

Here we are after 18 hours.
I always adjust the Stoker to my magic number of 260 dome. They are just pulling out of plateau and will sit in a warming cooler until they they are ready to be pulled. Super moist and fall apart!
The cook will get the sweet caramelized jalapenos and onion with some of that yummy bark for breakfast.

I guess you know the old stoker will go wireless, as long as there is the ethernet output on the stoker. You just need a wireless router/access point or such. Someone was selling some new Linksys routers for $30 the other day. They work great for wireless connections.
