BBQ Maven and I entered the world of BBQ competition last Saturday, using only 3 large Eggs for all our cooks. This was the Slidell, LA KCBS-sanctioned comp. There were 35 Pro teams, including Smoking Triggers (TX), Lotta Bull (OK), Team Bobby-Q (BGE Mothership star :woohoo: ) and many other seasoned teams.
We didn't take home any money, but we didn't finish DAL (dead ass last) either. We made some technical as well as judgement mistakes, but had a great time and learned a lot about competition BBQ - like how HARD it is and how worn out we were the next day ! :(
Anyway, a few pics:
This is the egg crate BBQMaven (Kent) built for transport (awesome):
Our trailer with everything except the kitchen sink (one of our neighbor teams actually brought a 'kitchen' sink  ):
Kent, then me posing with our three-egg set-up:
Our home for 2 days:
Right in the middle of deboning and defatting chicken thighs - which drew a big crowd of passing spectators:
All the conveniences of home (almost):
Fellow Forum member Steve Munster (Bayou Egger) competed in the backyard division, also using Eggs:
He and his wife Tracy receiving the 3rd place People's Choice award :woohoo: :woohoo:
Some food pics - presentation boxes:
First is our only decent score - 11th place in Chicken (cupcake pan, boneless thighs):
Spare ribs:
Team pic: (Me, friend/sous chef-Mike, Kent) with pork box:
Pork box:
Brisket (Our photographer didn't get a box shot :( ):
We want to thank the many of our fellow eggheads who gave us wonderful advice and help along the way. Also Team Bobby-Q (Bobby and Charlie) for making us feel at home in their world of competition BBQ. We are looking forward to our next opportunity to improve our Q scores ! :woohoo:

It all looks good Clark. Nice to get your feet wet and not be DAL
-
Thanks, Pat. The level of competition is amazing. Our chicken got 9's (highest scores) from all 6b judges on the appearance, but a few 8's on taste and tenderness and boom, we're down to 11th place, since they're higher weighted in the scoring than the appearance score.
You basically have to get everything perfect, with no mistakes  Pretty tough, but we still had a blast! Can't wait to do it again! :woohoo: -
Great! Thanks for sharing.I'm judging Smokin on the River in Columbus this weekend.I can't wait!I'll bet 2 dollars to a hole in a doughnut that it is 25 times more work than most people think! CONGRATS!I think ya'll did GREAT for you're first foray!

My SIL is named Dallas and we call him Dal for short!!!
-
Thanks, Hoss.
I sent a Facebook note to the Ashland "Springfest" inquiring about the deadline for team registration. They are the worst group to get to respond to anything !
It WAS tedious & stressful, but fun at the same time. WE BOTH slept like babies when we got home Saturday night!
I think a comp cooking class might be very helpful. -
Thanks for sharing all the pictures. You turned out some beautiful meat. Are y'all going to give it another go?
-
Wow, that was a big weekend of cooking. It looks like fun (and alot of hard work as well). Thanks for showing us the pics of what it's really like. Now go rest.
FaithHappily egging on my original large BGE since 1996... now the owner of 5 eggs. Call me crazy, everyone else does!

If you tell him our interpretation, he might not appreciate the nickname much longer ! :woohoo: :woohoo: :woohoo:

Looking for another one that fits our schedules.
LOTS of room for improvement ! -
Email them directly. Their contact is on the KCBS page...I always get a response in a day or so...hope to see you there!

Thanks, Faith. We had a great time, but it IS stressful and tedious at the time.
-
Just did that also, Squeeze. Thanks for the reminder.
I'm not sure if we can work it with our schedules - Kent has a son getting married soon and his free weekends are disappearing fast! -
 How I wish!!!

Are you gonna be in Ashland MS in May???
-
Yep, we will be heading over there in May. Kind of excited to see the new venue for this contest. Hopefully there will be no rain....

I will!

Well now that you have your feet wet, time to learn from your mistakes.
I would invest in a competition class if you haven't done so already, it would cut the learning curve down.
We're getting ready to go against Trig for the second time this year this coming weekend. Hopefully we can get him this time around.-SMITTY

Clark, it looks like you are you are on your way! Great looking food! You certainly had a respectable finish in chicken. Congrats.
-
Clark,
Thanks for posting the pics...
I want to thank all the people who gave input on transporting the Eggs... All that worry and they traveled perfectly...
It was so much fun watching people walk by and double take when they saw the Eggs... "What's those?", "So that's an Egg!", "Looks like a big avocado", What's it made of"... but the best quote "official Egg Rep - "..you know you need to replace those gaskets..." to which I responded, "what's a gasket?" :woohoo: :laugh:Kent Madison MS -
We beat him in chicken - kinda proud of that!
-
Thanks, Todd. I have some sauce questions. Will email you soon.
-
I had forgotten about him !
-
Looks like a lot of work and a great time.
Thanks for sharing Clark. -
I've come to realize... an Egg is like a good pair of blue jeans - once they get broken in, you don't want to ever deal with new ones again :laugh:Kent Madison MS
-
Thanks, Frank. It was definitely a lot of work, but the kind one really enjoys!
-
Ya know, we didn't mention our "next tent" neighbor and the amount of "adult beverages" they consumed... seemed to help their scores?!?!?
Next time???Kent Madison MS
