Never tried it....I'd imagine you'd burn all the hair off of your forearms if you tried to make a roux over charcoal, and the BGE isn't at its best when operating with the top open. Still, if you used jarred roux, indirect heat, and kept your lid opening/closing to a minimum, I'm sure you could pull it off if you had to.

Linda, maybe Frank from Houma will chime in, he makes it all the time. If he doesn't you may want to do a search or email him. He's very helpful. I still make mine on the gas stove inside. I feel I need to control the heat and make minor adjustmaents easily and quickly. I do know that some people make an oven roux with great success and that would work on an egg.

I am putting on some Jabalaya Monday.

YES! I have made gumbo on the Egg.
I have however, gone to making my Roux on the stove top, then the simmer on the Egg. It just goes easier (no burnt hair)for me that way.
BTW, you have mail with some tried and true recipes. -
frank --you are awesome --this looks so yummy -- cannot wait to cook gumbo in our big egg ---my hubby & i are so excited we found you on the forums --u are a sweetie --hugs

I do the roux on one egg and then move to a second one. Roux on the stove on then moving to the egg is much easier when making a gumbo on one egg.

I would try " Richard Fl" recipe. I did and it was fantastic!!!!
