I'm not a huge fish guy, but us Catholics cant eat meat on Friday's during lent so I tried this recipe out of the Egg Cookbook. Thai Sea Bass.....

That's banana leaves from the local foreign supermarket. The cook was 350 for 7 minutes each side or 130 internal. There was a sauce not pictured that was coconut milk, red curry paste, and chicken broth brought to a boil and simmered. I used DP's Tsunami Spin for my seasoning. This was pretty damn good i must say.

Appreciate it, mark. I'm still new to this and was hopingmy description from photo bucket would upload with the pci but it didnt. chopping up the ingreditents was hard but after that the whole "wrapped in banana leaves!" aspect just sounds really good and impresses people- not hard at all after the chopping.

Do you guys grow most of you own herbs?

i have a few, some come inside, some survive the newengland winters. outside i have sage and three varieties of mint, and i have a big rosemary bush and a bay bush that moves outside during the summer. then i plant a couple basil, oregano,cilantro, and thyme, all those grow quick outdoors. i used to freeze alot of basil but lately its been cheap at the market and they give a BIG bag. then i have enough blueberries to feed rum punch to maybe the whole forum :laugh: this summer with the new mint crop i planted last year there will be mint blueberry mojitosfukahwee maineyou can lead a fish to water but you can not make him drink it

Eggle, I really appreciated your post. I love Thai food and your cococut curry makes me hungry. The banana leaves always make for a nice presentation and you can make them up ahead of time. Lovely pics.
