Thinking of cooking at Fred's eggfest + pizza pron

Going through some ideas...i'm tinkering with whole wheat pizzas..any ideas are appreciated..
Here's some test cooks I made today, I'm also thinking a pulled pork, bbq sauce & fresh basil pizza ..the pork butt would have to be smoked prior to the eggfest but that's no big deal
Left side is Cabot Pepperjack and fresh basil (with a dusting of Tasty Licks Treehugger Veggie Blend) , the right side is homemade pesto (pine nuts, fresh basil, EVOO and vegan parmesan cheese - wife is lactose intolerant) and grilled chicken breast (rubbed with lemon pepper)
Both came out pretty damned tasty. I started keeping the temps down a bit for a try - i have been cooking at 550-600 and i tended to burn the bottoms, so i cooked at 400-450.

I knocked around several different attempts at whole wheat pizza dough last year and never could get one I was happy with. High hydration is the key. I kept getting them too dry or too tough. I settled on doing about half whole wheat and half high gluten white flour. Texture and moisture of the dough where acceptable but really not as good as using white flour.

honestly i bought the dough from trader joes...and i liked it a lot, good flavor, chewy, and not at all like cardboard

I've been really happy with Trader Joe's dough! Haven't tried the whole wheat - the white stuff is just so good.

:ohmy: They are trickey!If you cannot Master it,I won't even try! I would love to do a Whole Wheat ZA dough.When you figure it out,please post it!
