In need of a easy scallop recipe to cook for Valentines Day. Bought some from Sam, wife loves scallops.

    Spicy Shrimp and Scallops in Margarita Butter

    -- Shrimp & Scallops --
    12 Jumbo Shrimp , tails left on
    12 Large Scallops
    1 tablespoon Chili powder
    Salt, to taste
    Pepper , to taste
    2 tablespoons Oil, Extra Virgin

    -- Margarita Butter --
    1 tablespoon Oil, Extra Virgin
    ½ cup Onion, Red, diced
    ½ cup Wine, dry white
    ½ cup Cream, heavy
    1 cup Butter, unsalted (2 sticks)
    3 tablespoons Tequila
    1 lime Lime juice
    Salt, to taste
    Pepper , to taste

    Shrimp and Scallops
    Heat grill to about 450 degrees and oil the grate. Season shrimp and scallops with chili powder, salt and pepper. Brush with oil. Grill each side for 5 to 6 minutes. Serve drizzled with Margarita Butter.
    (makes 4 servings)

    Margarita Butter
    Heat a small saucepan over medium-high heat and add oil. Add onion and cook until translucent. Deglaze pan with wine and reduce by half. Add cream, lower heat and reduce by half. Stir in butter a bit at a time, over low heat, until all is used and sauce is thickened. Stir in tequila and lime juice. Season with salt and pepper. (makes 2 cups)

    Here is wise one's recipe that I tweaked.


    Scallops Wrapped in Bacon
    Submitted by Wise One modified by WingRider
    Based on the the Bacon Wrapped Scallops done by the Cornerstone Restaurant in Fishkill, NY.
    Ingredients:
    Ÿ 1 LB fresh sea scallops (1 ¼ to 1 ½ “ across) (10-16 in number)
    Ÿ 1 LB raw bacon (very lean center cut).
    Ÿ 10-16 toothpicks soaked in water for 30 minutes
    Ÿ 1/2 cup lemon juice
    1/2 cup maple syrup (the real thing and Grade B if you can find it)
    Ÿ Favorite rub
    Preparation:
    Ÿ Marinate scallops for 4 hours lemon juice with maple syrup.
    Ÿ Take a piece of bacon and wrap around the scallop securing in place with a toothpick.
    Ÿ Coat the exposed ends of the scallop with a favorite rub (Paul Prudhomme’s Cajun magic or
    similar.) Dizzy Pig Raging River is great
    Cooking:
    Ÿ Cook over a drip pan on a seafood grill for 30 minutes at 375 degrees. Turn half way through.
    Ÿ Serve alone or with a favorite cocktail sauce.

    Definitely depends on the scallop. If they are large sea scallops just dust them with your favorite spice, put a little canola oil in a non stick pan and sear each side until brown (maybe a minute a side). you don't want to overcook them or they will become tough. Make a nice salsa or a balsamic reduction with shallots. Maybe a pearl couscous or a sweet potato puree. Good stuff.J.

    Roll 'em around in a little oil, little lemon juice, some minced garlic, salt, some cajun spice plus a little of your favorite rub, then cook direct at about 350*, but not too long. The shrimp is done when they curl up. The scallops will take just a little bit longer.

    Twice now…I’ve done jumbo (sea scallops) on skewers, seasoned with Old Bay on both side and set to meld for a bit in the fridge, wrapped with bacon, seared and moped with a Peach / Bourbon sauce.
    It worked! ;) !
    Remember…
    You got to do them hot and fast, shut down the fire, then do the mop and let them set a bit.
    Caution: DO NOT cook them into rubber :( !

    Bourbon / Peach Barbecue Sauce for Seafood:


    1/2 C. peach preserves
    1/4 C. bourbon
    1/4 C. chili sauce
    2 t. OLD BAY® Seasoning

    1)) Combine all the ingredients, bring to a boil. Reduce heat simmer for about 5 minutes (to you desired thickness)...Set aside and cool.

    2)) Baste / mop this sauce, give it some time to set and serve.
