let me start by saying leveling a fire at 160-180 deg was not the easy for me. I lit my fire and got stable at 200 deg three times. what I read and understand was that I needed to be a little lower. so less air was my solution. lost my fire on all attempts. so not a very successful 1st jerky attempt. I only closed bottom vent a sliver. a small sliver. acccepting any and all advice.wounded but not out!!!!

small pieces of preburnt lump about 2 inches deep works for me. trick is lighting with a big weed burner to get an even spread fire going and then not letting the fire get to high in temp, thats always asking for problems, you dont want those temps to spike first. scott borders does it with lump in a coffee can, i think his method is on the naked whiz site and would be a good method to tryfukahwee maineyou can lead a fish to water but you can not make him drink it

thanks fishlessman. I did use your advise and went with the fire bricks and expanded grid. was wondering do you use a plate setter with that setup?

When I last did jerky, I had the fire at 170, but when I opened the dome to move things around, it crept up a little. Each time, it crept up a little. By time I was done, it was up to 200, but it didn't seem to hurt anything. I liked the jerky and Scooby the Wonder Dog loved the jerky! The Naked Whiz

i dont own a platesetter. if hanging up high i dont use an inderect setup. if using the mound method i do lay bricks under the grill for inderect. the diect hanging is more difficultfukahwee maineyou can lead a fish to water but you can not make him drink it

Try the coffee can method (By Scotty's Inferno).
Last time I did it I was able to hold 150F for 9 hours on my XL (had to reload lump at 6 hrs).
Here is a link to the setup I used:

Jerky came out great.
Good luck!

thanks for the help. I think I will dedicate a morning to building a fire and keeping under 200. I feel confident I can stablize again at 200. if not I will proceed at 200.
