I would like to cook a whole pineapple with my chicken tonight. Any suggestions on how to do this? What temp, and how long?

Are you wanting to keep the pineapple whole? I can't recall ever hearing of anyone cooking it like that. I usually cut mine into long spears and brush some butter mixed with pure maple syrup (50/50). Then sprinkle on some Dizzy Pig Pineapple Head and grill at 325 direct till both sides have nice grill marks and it's warm. Top with a scoop of Hagen Das vanilla bean ice cream. Sprinkle a little more PH on top of the scoop of ice cream. Deeelicious!!

Rainman, Soak the pineapple in rum and sugar (these amounts depend on the taste you are going for). You can soak them for a few hours for a very potent liquor taste, or for 30 min or so for a lighter one. Grill the pineapple until desired doneness, in large pieces, on direct heat at about 350 or so. Remove from the grill and chop as small as you wish. Then top with whip cream or simply eat plain. :woohoo: Tim

That's a great idea! Get the judges tipsy. I'm not sure if that's legal though.

I am a judge and there might be chance that could happen before the pineapple. Didn't DOW serve AL last year?
So Chris and I have you confirmed for an IEC? He always has me recruit chefs.

Ann, I can not take credit for that Ann. Today after I read this post I emailed Jenna a Sous Chef for Chef JJ in Indianapolis because pineapple was grilled at the Indyfest last year and I asked if she knew the recipe and she sent me this but this recipe was not served at the Indyfest. Tim

You're right, DOW did have shots on her entry. Maybe that's why she got 2nd place.

Steve, I'm usually the designated roaming bartender at most of the eggfests. I just give the people what they request. I remember you saying quite often...."Another shot of "Knob" please".

I have still not perfected my grilled pineapple. Next one I plan on using Reichland's method which basically involves coating pieces of pineapple with coconut milk and then spice (in my case DP Pineapple Head)
