i wast once told to buy the smallest baby backs because they would be more tender? I blindly have followed that advice. so i buy the smallest 3 packs from sams.
Here is my question...
if the theory is right i would also buy the smallest butts they sell. I want to buy large butts.

I always look for the largest of both

i started to question my logic sat night with temps in the mid teens cooking less than 16 lbs of butt. No more effort could have cooked 20+ lbs of larger butts.

Smaller is just usually a younger animal and should be more tender. Less muscle strength.
I look for the darker flesh when I buy pork This seems to give me the most flavor and tenderness.
Just the method I use. Give it a try and see what you think.

Steve, Personally and as far as butts go I have cooked big butts as big as they come and butts that are small or have been trimmed down and I prefer the largest butts. I think the largest butts smoke better...that's my opinion on butts.
I have only cooked spare ribs and I look for the biggest packs of them as well. Then I trim them up real good before smoking. I smoke the trimmings as well or I loose the trimmings unless I buy a grinder and start making my own sausage but, that's a whole other story and I'm sticking to it.

Yea what Tim said (as well as FlaPoolman). I've not had near the luck with small butts as I've has with larger ones - they just seem to cook out better. WRT ribs, I buy the spares Costco has (always a good size) and trim'em up and go for the egg.

i like the big costco back ribs. no reason to ever buy a small pork buttfukahwee maineyou can lead a fish to water but you can not make him drink it
