Crawfish Jambalaya Stuffed Chicken

Picked up a deboned chicken that was stuffed with crawfish jambalaya on our way back home the other day. Rubbed with Hoochie Mama and put it on the small at 350 for about an hour and a half with a little sugar cane for smoke.

Cored an apple - but not all the way through and loaded it up with DP PH and then a pat of butter

The jambalaya had just the right amount of seasoning and the chicken was mightyfine. Plated with some potato that was egged earlier and some spinach, apple, satsuma, and raspberry salad with vidalia onion poppyseed dressing.
