    I'm thinking about 2 hours at 325. At 110-115 internal I will crank the heat up to 600 or so for 5 or 10 minutes. I used olive oil, salt, pepper DP cow lick and a touch of herbs de providence. I will pull at 120-122 and rest for 15 to 30 minutes
