Had a small T-Bone tonight. I fired up the egg to almost 500º with half Mesquite charcoal and half Royal Oak. This was not a very large T-Bone and was on the thin side so I gave it about 3 minutes on one side and closer to 2 on the other. I lightly scored the sides and rubbed with sea salt, pepper, coarse garlic powder and Lea & Perrins Worcestershire Sauce.

The outcome . . .
This wasn't the most tender T-Bone I have ever had but the flavor was right up there.

Never could figure that one out myself... :blink: ...but that's what makes the world go 'round! If we were all the same, it would be pretty boring!!! :laugh:

Yes it does make the world go round but when I am taking off the steaks and there is one or two people who want their steaks a little more cooked, I get frustrated. Especially on the EGG.

The score remind me the of the duck bill did. Looks great and the 1st time I remember seeing that done on a stake!! Lookes great!

Thanks, I'm not convinced it does any good, it may help hold seasonings in place, it may increase the surface area slightly so the Lea & Perrins can soak in a little better. It doesn't do any harm if done before the steak is cooked. I have never noticed a loss of juices. It does look a little different. I probably saw my Dad do it when I was a kid, he used the same seasonings and was master of the hibachi. He didn't know half of what we do about grilling today but managed to do a great job with steaks and swordfish.

I was a little surprised at this one. I thought with all that marbling it was going to melt in my mouth. It was going to be a s-l-o-w melt! :cheer:
All that marbling gave it some great flavor so I still enjoyed it very much.
