Someone tell me I'm being fanatical...
When I was a little boy, I remember my dad grew mushrooms in the dark, cool basement of our house. He went to a local horse farm and picked up fresh horse s**t and packed it in wooden boxes. Then put a spore right in the middle of each box. Then he stacked them on top of each other and waited...then harvested.
Now every time I see a cooking show on TV, the Chef always says don't wash your mushrooms...just brush them off, because they'll hold too much water when you cook them.
NOT ME! I wash my mushrooms! Am I over doing it?

I have a small mushroom brush and run under cold water and brush, then chop, dice, leave whole or whatever the meal calls for.

I rinse the tops then pat dry with paper towels

Alton Brown debunked that myth. They don't hold too much water. The amount they absorb is negligible. He soaked 4 ounces of mushrooms in water for 10 minutes and combined they held less than a teaspoon of water.
I wash mine before using too for exactly the reason you point out. -
Thanks for that. I knew I could count on Alton...and you!
Merry Christmas, my friend. -
I airbrushed these this time. Sure hope these weren't grown by your Dad.
Merry Christmas!
