Fatty plateau

I have had six fatties on at a dome temp of 250 for four and a half hours. They are now at a plateau of 145 internal. It's about 30 outside but the dome temp has been maintained the entire time. How long could this take? Can anyone help? Janet

A fatty shouldn't plateau at all..only a muscle that is breaking down collagen and fat and connective tissue..not a ground piece of pork..

four and half hours they should be done. Make sure what ever you are poking them with is accurate..

Not budging from 145 for 1 hr. says plateau to me. What gives???

Yeah...but it shouldn't plateau..just reneder out through most of the normal cook time...and they do reneder it out.. :laugh:

Check internal with a thermapen if you have one..if not, try a different thermometer..other than that the dome therm might need calibrating...and you are right...that certainly does sound like a plateau...

OK The breakdown of fat and collagen (connective tissue) is referred to a RENDERING.. When the rendering starts it will plateau. It may be quick as in bacon or annoyingly slow as in Butts and Briskets, but it will plateau. -

I suspect they are more than ready now. One pound Fatties usually don't take four hours.
Do you have another thermometer you can double check with? -
Yep. Checked with my trusty Taylor and got the same reading. Five are stuffed but the one I'm using for temp is not (left it unstuffed as a control. I've got one stuffed with pineapple and jalapeno and coated with Pineapple Head, can't wait to try that!

Boy, that sounds weird. Normally they cook like clockwork.... I smoked 20 of them for appetizers at a big summer barbecue and they were within 5 or 6 degrees of each other at about the 3 hour mark. I take them to 170° internal, then remove and wrap in foil for 1 hour.Happy Trails~thirdeye~Barbecue is not rocket surgery
