Does anyone have a recipe for a easy appetizer? Is so would you share?

I would suggest ABTs or weiner rollups with crescent rolls and little smokies.

Chicken wings are the easiest: just marinate overnight in hot sauce, then grill. Also easy, provided that you have a source for oysters in the shell--chargrilled oysters. Open the oysters, top each with a little butter, minced garlic, parsley, and grated parmesan, and cook over high heat until the oyster curls a bit. Figure on two or three oysters per person; serve with crusty bread to sop up the oyster liquor.

Would you mind sharing the recipe for stuffed fritos?

TnVolKen,
There are all sorts of things you could make. Do you define easy as 'quick prep time', 'short cook time', 'simple recipe', etc.? Here are a few ideas ... if you browse through the BGE section of our blog (or the appetizer section for that matter), you'll find a bunch more ideas.
I agree with the chicken wing comment from Hungry Celeste, and the overnight marinade isn't really necessary, making these simple to prepare. They can take 40 minutes or so to cook indirect, though you can also do them direct much quicker. You can do the traditional hot wings, or something different, such as the pomegranate wings, honey lime wings, or bloody mary wings I've blogged about.
Bloody Mary Wings
Buffalo Style Wings
If you want to try other grilled or smoked meats, kabobs always make a good appetizer. You could do something like this pork and pineapple satay, or these lamb and pineapple skewers with pomegranate chili glaze.
Pork and Pineapple Satay
Lamb and Pineapple Skewers with Pomegranate Chili Glaze
For non-meat items, you could try something like jalapeno poppers,
grilled polenta, or grilled eggplant slices in garlic-infused olive oil. You could also do a quesadilla, with or without meat, such as this red pepper, mustard green, and goat cheese version my wife came up with.
Smoked Jalapeno Poppers
Grilled Jalapeno Cheddar Polenta
Red Pepper, Mustard Green, and Goat Cheese Quesadilla
Finally, if you already have some smoked meat around, you can use leftovers to make some great appetizers. Someone already mentioned ABTs. You can also do something like these pulled pork nachos, or stuffed poblanos.

Stuffed Poblanos
Hope this is helpful,
