Ok, I saw the pastrami thread just a little while ago and it got me motivated. I decided to try the recipe from old dave's blog where you bring/cure the brisket for 4 days. Wow it's pretty damn good!

Awesome! I've been wanting to try pastrami. I'm thinking about halving a brisket this march and doing one half corned for St. Patty's day, and one half pastrami.

The 4 day process is worth the wait guys. This stuff was incredible. I did a 5lb brisket I bought from costco and halved it. Followed the recipe exactly and it came out NY deli style. The first half is already gone. Looking forward to pastrami this week! I'm hoping santa gets me that meat slicer for Xmas. Then I can achieve perfect thinly sliced pastrami. It was pretty easy too. You just need to buy the arsenal of spices for this. I also need to get a better spice grinder for next round. Lastly, I had a hard time finding whole coriander seed. Ended up going to the Indian grocery store close by who had it... -
