Here in Iowa they claim we are having the worst snow storm since the mid 90s. We currently have 15 to 16 inches and it is still snowing. My wife, the smart ass that she is, looked at me last night and said "I bet you aren't going to Egg tonight!". Two minutes later I was outside making a path for my Egg and firing him up.
The pictures don't really do the snow justice!
Of course the beer helped!
I love the spider with small CI grid, I don't have to get the Egg to nuclear temp to get a decent sear:

It is funny you say that - as I was reading your post I thought to myself how you had significantly better egging weather than me. Good looking cook, I need to try a tri-tip! -
I have a son that lives in Pleasant Hills good to know he is shoveling and not me.

Those ribeyes look wonderful - it's interesting that you used a smaller CI grill - what temp did you cook at and how long did you cook them?

I seared these at about 500 degress for one minute per side. I probably should have done them for a minute and a half per side to get a little better char.
I then rested for 20 minutes and brought the egg down to 400 degress, roasted on raised grid. pulled at 135 internal temp. -

Iowa State Egger, I need to get the spider and small CI grate. At 500° dome temp I wonder how hot the CI grate is on the coals. How far are your coals from the CI grate using the spider? Tim
For my large I want the spider and CI grate as well as the baking stone. Is it true you can use the large 14 inch baking stone with the spider? Then I will want a wok. Then an adjustable rig and some rectangle food grates...it never ends but, I love the food that comes off the egg! :P -
I couldn't resist - this is what 18 inches of snow looks like.
The first three are off the back of my property. They guy moving my snow was struggling to move it!
This is my front step - probably about a five foot drift that I have the pleasure of scooping later. 18 inches of snow with 30 miles per hour winds aren't much fun

Obviously it depends on my much lump you put in. I was actually running a little low last night (and needless to say I wasn't running to the store), so I filled up the fix box probably about half full. Thre was probably and a couple of inches between lump and grid.
For the most part, the grid will be just above the top of the firebox or at the bottom of the fire ring.
As far as the size of the stone, I better defer to other eggsperts. I know that with the Adjustable Rig and Spider you can do a dual level low and slow cook, using the stone as the heat deflector. I have never done this - if I want to cook that much meat I use my XL. -

We're getting the same weather here in WI. It started snowing yesterday and it hasn't stopped. I've got 2 whole chickens I want to egg tonite but I'm going to have to shovel my way to the eggs. :( I think we have 12 inches of snow right now and more to come. Uggggh!!

Those steaks are beautiful. I blew some snow around last night hoping it would make today easier...easy.
Oddly enough the area right in front of the Egg was clear. Couldn't get out the door to get there, but its like someone knows what's important.
Be safe in Des Moines. I was supposed to get there this afternoon, but called ahead and got a "no go!" -
