Girls wanted em hotter so marinated again in Chipolte sauce, tobasco, red chili flakes, red wine vinegar, veg.oil and some water most of the day. Removed and put on a drying rack over drip pan in the fridge over night but gave a coat of D.P. Swamp venom.
Cooked indirect, raised grid turning every 15 min. 400 degrees for close to an hour. Sauced the last 5 min. both sides with Chipolte sauce mixed with swamp venon and more red chili flakes.
They got a little more crisp then I wanted but that is the sauce, may drop the temp next time.
These should be X Tra hot,

You just can't do this to us at lunch time....Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Plus a couple Pit Boss Pellet Smokers.

Like smoke coming out of your ears.

Those are beauties, Bordello! Hope they've got plenty of grog up at the pub to put out the fire.
Joe -
Hell, I don't even get one. Just got to the pub and only one is working now the other at 4. This one is one happy girl but she has not tried one yet. :woohoo:
Have a good lunch,

It's a bar and grill so they have to have something.

Yes, sir, that's a good gig you've got going on.
The barter system is accepted at my local brewpub. A pound of vac-packed pulled pork is usually good for 2 x 24 ounce brews or a beer and a shot.
Joe -
This one said she may not leave any for her best friend. Damn. :woohoo:
But I know she will. Need to drop the temp and pull a little sooner. They were a little crispy but not stopping her at all, she is still eating. :woohoo:
Cheers,

Very nice!
Three pictures of three hotties?
I think that those wings should be officially deemed "Bordello's Trinity Wings".

Thanks Fishlessman,
Have to be careful as I have a habit of just typing Fishless.

I won't try to guess and violate the PG rating of this family forum, but feel free to provide the answer in an email when you have a minute.
Life's way too short to be timid, I'm sure your soul's still in great shape, sir.

Good to hear you're appreciated also. Oh, and they take me home most of the time.

Bob,
The wings are probably perfect. You may want to sauce a little closer to the end. That black is from the sauce I'll bet. When is the Pig Roast?

Thanks L.S.
I also used a heavy coat of the sauce, made the mistake of closing the lower vent for after putting the sauce on (top still off) but the temp went from about 400 to 440.
I'll keep working on them, the girls love them either way.
Pig roast at the pub is the 14th.
Cheers,
Bordello
