I ccoked some'en: Good ribs, friends and tequila

Just got threw working nine 12hr days in a row. I needed to relax so yesterday went to butcher and picked up 2 big racks of baby backs, called my ridding partner and his wife who just got back from cruse to Cosamile Mexico and fired the Egg.
Just a easy cook that everyone loves. Made rub of brown sugar, cracked pepper, powder ginger and all spice, red pepper,peprika, and chili powder. The raws:
Rubbed them down good.
Then cooked for 2 1/2 hrs spraying every hour and flipping with whiskey and Coke. Foiled with the whiskey/Coke mix for 30 min. and back on the rack for 30 min.
When my partner showed the brought me a little supprise back for Mexico. This an't your salt and lime stuff!
Some baked beans and desert and a nice fire in the chemenia and not a better way to spend All hallows eve! :evil:

Wife did the desert and beans as well as set the table, make the tea and pretty much everything else minus the ribs! :laugh: Ya'll get burried by the snow?

Some'en about a drunk parrot on my shoulder 1 inch from my ear and a beak that can crack a nut in the blink of an eye does not sound to much fun!!! :laugh: I keep him nice and sober. Now my Arabian is another story! :P

Hey J, I was all tensed up before I read your post but, i'm calm now.
I was ready to start a brisket tonight but, changed my mind I'll start it tomorow night. :side:

The only thing I do differant than a lot of folks do with their ribs is not cook as long. What is it, the 4-1-1 method I think, will tend to dehydrate my ribs for some reason. Don't know if it has to do with my Medium as compared to a large or what.

Yes it was smooth Dale!! :woohoo: I don't think you can get it hear in the states though. He paid $60 in Mexico in the "tween" zone. You know not in the tourest section but not in the old town eather. Even the wives didn't need salt. I will say this that even though it was one of the best I have had one would think if you could get it hear it would run $80-90 and at about $25-30 for a bottle of Jose Cuervo Tradicional 100%De Agave I don't think its 3 to 4 time better. But for special occasions its right on time. The bottle is absulutly wonderfull with a blue agave flower hand blown in glass in the center.
