Got a few quail (no...I didn't shoot them...I bought them... ). Richard FL posted a while back with quail wrapped in bacon. Well....liking my quail breast more to the medium stage, I decided to do this experiment.
I removed the legs and wings, and split the breasts:
Then I wrapped the little legs in bacon:
Onto the egg, direct, 400*
Put the breasts on when the legs were nearly done.
All done.
The legs were a bit overcooked where they weren't covered with bacon, but these were very tasty!! And yes, those little burnt offerings are the tiny wings... I love to eat them when they are super crispy.
All in all a successful cook, though I will cover the legs a bit better next time. The breasts though were quite perfect.

I would love a smoked duck sammich with smoked gouda on a french baguette with La Bomba & sweet jalapeno pickles...and a side of bacon wrapped quail...

Thanks Jay!! They are very tasty! They are all dark meat, like duck, but without all the fat duck tends to carry. As you can see, they are pretty tiny...takes two to make a meal.

Rusty...I am sure you can! I didn't want the breast cooked past medium, so the bacon would not have crisped up. I was happy with the leg/thighs in the bacon, and the breasts just seared....but you can certainly experiment!! :laugh: Richard FL posted whole quail wrapped in bacon not too long ago, FYI.

Thanks for the welcome. Been cooking on other smokers /grills for a long time, just got the Egg a month ago and found the forum about the same time. I am truly amazed at how much improved my old grilling and smoking recipes are on the Egg. The forum has been a big help getting started with the Egg

Have not had Quail in years. The last time it was so dry that it took all of the moisture out of my mouth

Looks great Michelle. I like too stuff either cornish or whole quail, then wrap in bacon. also I prefer basmati and use orange juice for 1/3 of the rice liquid. Have full recipe if interested. Quail are a PITA to stuff and wrap, string is very helpful.

No disrespect, but, that certainly wasn't the Quails fault! :laugh: :silly: :laugh: But it is also true, since quail is so lean, it is easy to overcook. Give 'em another try. -
That is a tasty way to cook them,I am going duck hunting tomorrow and will be chasing those varmints in the afternoon-wiil have to try.

Let us know how the duck hunting turns out. Our season doesn't open until the Friday after Thanksgving ! :( I hope you guys leave some for us to throw lead (opps) steel at. :laugh:
