Pork chops for dinner

Made a couple of pork chops on the mini tonight: direct at 400+ degrees, using olive oil, S&P and a shake of granulated garlic, pulled at 150 degrees. I've been very pleased with the impact the granulated garlic has had on the chops lately. Add sauteed asparagus and mushroom and I have my low carb dinner.

Those look very good! If you are a DP fan and want to try something different, make one with Red Eye Express sometime. :woohoo: It was a suprise hit that I tried just for fun one night.

Great minds must think alike Bill. I also seared 2 thick pork chops tonight. Only I seasoned them with a sweet version of Drbbq's rub. My side dish was baked potato's on my skewer's with evoo and kosher salt.
I baked the potato's at 450*-500* direct with a broken half of a pampered chef pizza stone under them. After an hour I pulled the crispy spuds and cranked up the heat to 650* and seared the chops 4 min's each side and pulled and foiled it for 5 min's while the egg cooled to 500* checked it with the thermapen it was 140* so back in for 2 min's and pulled it at 165* it was about burn't on the outside with all that sugar in the rub and white with a hint of pink on the inside and juicy as all get out. :P
I used DP pineapple on the potato with butter and salt and pepper. wow :woohoo: I don't know if I am the first person to use DP pineapple on a potato but, it was fantastic! :P

Thanks, I try to limit the carbs in all my cooks and quite frankly I only miss the taters and pastas when I see all the fantastic cooks on this forum. :S :( :ermm: :laugh:
