naked wiz has a very easy method. Last weekend I did cheddar with apple wood and it worked well.

2009/06/12--Egret-- Hey Anne, I see you have the appropriate responses! The cheddar varieties are my favorite....they seem to have just the right amount of fat and moisture for an excellent smoked cheese. I would suggest you use the 6 charcoal briquettes method and use apple wood if you have it. I sliver my wood to about 1/4" thick and place one on each briquette. After about 30 minutes, if you don't see any smoke coming out of the top vent, open the egg and remove the setup and turn the wood pieces over to expose 'fresh' wood on the charcoal. Also, be careful about opening the vents too much during the process in order to prevent the wood from igniting. This can cause a rapid rise in dome temp., not to mention a lack of smoke...... Good luck with it...... -
What size egg?
Empty it out..clean it. You will need a soldering iron and your choice off chips. Yes I said chips. Chunks don't do it for this.
Let me kow how this turns outMolly

freeze some water in a disposable pan and set it on the platesetter, then set cheese above that...
-
What is the soldering iron for and how does that set up work?
-
Can you use a small amout of lump vs briquettes?
-
Lge egg

You'll need a soup/veggy can. Put a hole down towards the bottom. place the iron in that threw the bottom BGE vent. Chips on top!
Don't forget the ice tray under that!!Molly
