The ceramic top.......got a purpose?

Hiz...Helps snuff out the lump at the end of a cook, and also considered a storm top. We always put our DFMT inside the egg and put the storm cap on, just in case it rains.

Yep. When shutting down your egg, place yout dfmt inside the egg then place the ceramic top on. Smiles to hizzoner & welcome.

it used to sit on top to control air flow before the daisey was invented
it was not an exact science so they came up with the daisey wheel i use it to put on top of the egg when i am done i then pur daisey inside the egg and that keeps alot of the gunk from building uphappy eggin

please translate dfmt and then tell me why I can't just shut the air off to the daisy wheel??

Can't remember the exact interpretation of DFMT (Dual Function Metal Top or something like that). It is the official name for the daisy wheel.
The ceramic top provides a better seal than the daisy wheel, thus saving more lump. -

I do. You can also put it in there when you do a hot, cleaning burn and it will burn off all the accumulated "gunk".
If it gets some rust on it, coat it with lard or veg. oil, and season it at 350* in the egg for an hour or so. -

Mine has gotten very rusty, do you take the rust off or just season over it?

Mine only had a few rust spots on it. I just rubbed it with lard, then seasoned it and it turn out great! It's starting to get 'gunky' again, so I think another hot burn is in order soon.

Being a Newbie myself, I'm learning a lot.
I was having problems maintaining a low dome temperature, it just kept rising. After talking to 'Weekend Warrior' at the Pittsburgh Eggfest, I learned air was leaking under the DFMT. He told me to put a ring of gasket material around the inside of the DFMT to seal off leaking air. WOW... what a difference, I can easily hold 200 deg now.
I wouldn't imagine the gasket material would last very long if I stored the DFMT inside a hot egg. -
The gaskets hold up to the heat, and the strip you put on the Daisy wheel gets hot (ever touch the outside of the dome when cooking?) If you are concerned about a 'really hot' inside, then let it cool a little before storing the daisy wheel inside.

Paco...We did similar, except we put the extra gasket onto the chimnea/top of the Egg....left the DFMT original. The result is also a phenominal seal when we put the storm cap on. Lump is out in NO time.

Yup, me too. As soon as I shut down the egg the DFMT goes inside, don't care how hot the egg is - helps keep the DFMT clean.

For a tighter seal & quicker shut down use a square of aluminum foil then put the ceramic top over the foil. I found the foil will last about 4 or 5 shut downs.
Once I had some extra gasket material I did this.
Nice tight seal and keeps the ceramic firmly on all of my eggs.
