When we last left our hero, he was having the alignment problem.
Having discovered that the top/bottom were off by a full 1/4", warranty took over and a new piece was to be delivered and installed.
TOMMORROW - I will be receiving a brand spanking new egg! Delivered and setup with no charge to me!
I'm thinking ribs.... mmmmmmmm...

I think the newbie cook was ribs so I figger I'll do the same thing.
Now, next weekend is thanksgiving so I'm going to do a roast turkey on it - what wood would you suggest? I have pretty much all of them. Perhaps a bit of hickory or maybe maple? -
Pecan or Pecan/Apple makes a good Turkey smoke. (According to all my recipes). Never done a Turkey yet but like you, I'll be doing my first for Thanksgiving.
Nothing crazy. Following the KISS method for a first go at it. -
Pecan really gives the bird a nice color/flavour. If you don't have pecan, cherry also tends to darken up the bird...not too much though or it will blacken up, mix either with some apple.

You won't be disappointed. I was totally amazed tht two times I have cooked turkey just how good it turns out. It is one of our favourites. As for the wood, I have used pecan both times. I may have to add some apple this time around.

Congrats on the new Egg. Queation is, what happens to the remained of the other egg and the dome that won't align. Do you get to keep it? That would be sort of cool, but of course the prob will still exist, albeit a fun problem instead of frustrating one at that point.
