I have been on a Skirt Steak binge lately. You need to cook them more to the well done side and the flank steak rarer. I think the flavor of the skirts is better.

Beli, I like the flank better,I make my Carne Asada out of it and it seems to take the marinade better.

I am not sure which one I like best. But, I probably like "london broil" the best of the bunch, and I think that is Skirt??
This is a interesting question, I'd love to hear some serious input.

This week, Flat Iron and Hanger had a similare flavor to me with the wife voting for Flat Iron. I have one Hanger left in the freezer and will preapre it per Mad Max's recommendation and see if there's an enhancement in flavor.
We haven't egged Skirt or Flank so now I have a couple more steaks on the to do list - that's a good thing!

Flat iron without question.The robust beef flavor is awesome and it cooks well from blood red to medium and still remains very tender.I also like the fact that you can find them cry o packed as small as one pound which I think is perfect when you are cooking for just one person.

all i ever see up here is flank and it costs too much add tritip to the list, im all over the tritip and even that costs too much, those cuts are more pricey than a nice ribeye up herefukahwee maineyou can lead a fish to water but you can not make him drink it

I am going to try them on the egg. Generally I don't like the flat irons I've gotten in restaurants, but hey it is not the egg.... -

For me the order is:
1. Flank
2. Skirt
3. Flat iron
4. hanger
Flank steak has a great flavor and is very affordable. We buy one flank steak for 10/11 bucks and it feeds my whole family of 4. We use for tacos, burritos or just grill it along with some vegetables. My Publix always has flank and skirt but rarely has hanger or flat irons. I will have to ask the butcher about it!
I was surprised to see flank rank so low by other posters, makes me want to try more flat irons and hanger steaks!
For skirt steak, takes a rub and marinade very well and is awesome on tacos.

I think that Flats are the best right now. But if money was no object. Prime Dry-Aged Filet would be my choice every time.This is the greatest signature EVAR!

Beli and/or whoever else might know or have an opinion,
When using a wok what cut of meat do you recommend using? A recommend for Faijitas would be helpful also.

I would use tenderloin or sirloin in a wok. Fajitas are historically marinated skirt but flank is sometimes used (to the detrement of the fajitas IMHO). Marinade in Arrachera marinade. I can't wait to get some more flap because I think that might even be better than skirt.

hands down i think the hanger steak is the 'beefiest' tasting steak on the cow....to really get flavor, you have to taste it side by side with other cuts of beef .. .one night we were having a little mini-fest across the street and hatch was egging up a really nice prime tenderloin on the egg, and i grilled up a simple hanger steak. .. there was no comparison. .. that tenderloin tasted like water next to the deep beefy flavor of the hanger. . .i think skirt and flank are very close in flavor to each other, but the hanger is very distinctive and unique on its own....

i would put tenderloin for flavor pretty much last on the list. :laugh: never understood the hype, only quality i see it having is being sized right for light eaters :laugh: i prefer a big cheap newyork sirloin (rump steak) to a tenderloinfukahwee maineyou can lead a fish to water but you can not make him drink it

Max this is also my point of view. TKS for sharing....and this is the real arrachera only about 1-2 lbs per cow......other cuts such as fajitas(skirt) & falda (Flank) are many times wrongly called arracheras since there is more of them on the animal cut. I think Flap ( the best of the falda) comes close to hanger.....

i looked for 8 months before i found them in atlanta which is two hours from where i live and that may be a little more than people want to invest in a steak and a cheap one at thathappy eggin
