My first attempt at beef jerky was a success
The use of a 2 lb coffee can with the top and bottom removed, 12 chunks of Royal Oak, and 3 chunks of hickory. This was placed directly on the lump grate allowing for a controlled burn of not over 200 deg. for 3 hrs. Used "Hi Moutain Jerky" cure & seasoning.

Finished jerky[/size]

Tom, The jerkey looks delicious. What cut of beef did you use?
Brian -
Brian,
I used a very lean London Broil which I trimmed any other fat from it. I wish I could have cooked it longer but the rain would not allow it.

Thanks. I'm dealing with the rain right now with a TRex steak

Good luck and I hope the steak is delicious. I'm doing a flat iron for tomorrow's cook.

Looking good, I like my Hi Mt jerky. Been raining here today also but was able to break in a new wok.
