Help with a Butt

I put a 9 pound butt on at 10PM Friday. at 10 AM Saturday it was up to 195 degrees. But now at 2PM Saturday it is back down to low 180s. Dome temp has consistently ranged from 225 to 275. What is going on?

Is there is a good chance that you hit a fat pocket or the bone when you got the temp? I always check in a few places.

I agree with Eddie, check the temp another place. With that amount of cook time it should be done.

First, that is a pretty big spread in your dome temps. My butts usually take 13 to 15 hours at 235/240. I think you need to check your themomters for accuracy. A butt does not go up to 195 then drop to 180. You may not have stuck your them in far enough. Check it again. Others will chime in soon.

Go outside, open the egg and stick the butt with a fork and twist. If the meat twist up easy, then its done. Remove and let rest in double foil.

If the dome temp hovered near 225, it is going to take much longer to finish.

I tried a second thermometer (both digital) and poked in another location. I am now seeing 190

twisting the fork indicated it was done. Its pulled and ready for dinner
