Can somebody identify this meat?

Asked my butcher about flap steaks. He called a packer and said he could get them. Now Pork Butt Mike, my good buddy, gave me one in Ocala and it looked nothing like this. This looks like a cross between hanger and skirt. Beautiful looking steak but I have no idea.

It's way thicker than any skirt I have ever seen, even in Mexico or Texas. Same grain pattern.

A few years ago Cargill introduced a line of cuts for the Latin market and called it the Rumba line.
I have one in my freezer now and the package says inside skirt steak. Yes it is thicker than the skirt I am use to and it does make great fajitas. Cook hot and fast like flank. -
Gotta agree with the rest Steve, it looks like a skirt steak to me. Maybe you need a bigger beer :P

There is an easy solution to this question. Cook it up and see if it tastes like skirt steak or something else.Were you charged a skirt steak price or something higher?

I am just about to throw one one. Never had skirt like this. Same butcher charges me 8.99 for untrimmed skirt.
I think I'll keep ordering flap at $4.00.

Turns out it is flap. I have had tons of arrachera in Mexico and never seen it more than an inch thick. These things are amazing. Randy has been talking about them for a while. Kim did Max in the throwdown last year with one.
