Not for the squeamish, but Gourmet has online now a free video of offal specialist Chris Cosentino butchering a whole pig's head to make porchetta di testa.

It wouldn't surprise me if the heads cost more per pound than butts.
Besides thee are two sides to the butts and only one head. :laugh:

WONDERFUL,my Grandma used to make HOMEMADE souse(Hoghead Cheese)The same way.I'm pi$$ed she died before I could learn her recepie.WOW that stuff was great on fresh saltines with a splash of vinegar!They ground the head to make it more like a meatloaf.PURE DELISH!!! :evil: YUMMEE!

I'm callin Bul....T!That is cuttin up an already butchered pig.He has certain points that tell people where different cuts come from,and that is cool.If you wanna butcher a pig,it starts with shootin em in the head with a .22 rifle and goes from there.Talk about GRAPHIC! I liked the clip,but it ain't butcherin a pig. :( BTW it was only half a pig.

you ain't butcherin unless you got a big pot of boiling water and a couple big knives.....singe and shave, singe and shave.

I remember my dad and grandfather with a huge trough of water with a fire going under it. I can remember them scalding the pig and scraping with the knives. Good memories.

I think I'll pass on the head part, but the videos of butchering the pig and cow were very interesting. So many cuts of meat I have not tried
