1st Attempt .... Brisket Update

It's been cookin over 8 hours now and is solidly n the plateau ... stuck at 162 for a long time and actually has dropped to 161. Hopefully will start to rise again soon.
Here is the start of the cook .... slathered with mustard and coated with a combo of Blue's Hog Rub and Cow Lick.
Here is 6 1/2 hours in .... opened up to spritz.
We can hardly wait ....

Here's one at 6 hours I did last year.
We ate part of it, and the rest is still attached to the bottom of the space shuttle Atlantis, valiantly protecting its crews from the ravages of re-enty. :laugh: -
Looking good so far. It will be worth the wait.

Temp is started back up from the plateau drop ..... hopefully won't be long now
