Spares on the XL

Continuing on with the experimentation on the XL today. Here it is getting up to temp earlier this morning:

Almost done here. JH Pecan Rub on the left, DP Redeye Express on the right. SBR original sauce. No foiling or anything, just indirect the whole time. Platesetter high this time instead of beneath the ring, and only some HD foil for the drip pan. 250° on the DigiQ with lots of pecan for smoke:

NOTES: Don't like the platesetter that close to the ribs at all. Need more air in there. Kids liked the flap off the back at the 2.5 hr mark, and enjoyed the ribs. I'll be tweaking the setup and method on the XL and will try again soon, but not too soon. I cooked a lot of pork this weekend, and need a break from it for a short bit.

Pecan rub still one of my favorites. I used Red eye express tonight on a prime rib. Thats some awesome stuff too. Great looking ribs.
