Cooking first 2 butts aprox 7lb each is 200 ok

Cook at 250 until the internal temp is 190. 250 is easier to maintain without a guru/stoker.

225 would be better. If you are going all night and want to sleep a little better go 250 unless you have a guru or a stoker. I cook the butts at 225 and check every few hours but I don't have the stokers.

I cook butts at 225 until they reach between 190 and 200. I like them closer to two hundred then 190.

If you cook at 225-250 it will be just as tender. I lean to the 225 but thats me. Last ones I did too a little over 18 hours

I will search it but what is a guru/stroker and DIGQ. Guessing a blower.

It is a temp control device. I have the Digi Q II. It is great for long overnight cooking.

Mike, What cfm Blower are you using and do you think 25cfm is way over kill? And how do you like it, would you recomend one for someone who does alot of slow cooks. My first I nearly had a flame out but caught it in time. Would not want to repeat and miss it

Just finished two butts this afternoon. I used a BBQ Guru (now sold as the Digi Q II).
Advantage: Put the butts on the grill at 9:45 pm, set the grate (air) temp for 225* and the goal meat temp for 205*. The lump was about 1-1.5 inches from the top of the fire RING (not fire box).
Went to bed and slept all night. Opened at 5:30 am and spritzed with apple juice/vinegar combination. Spritzed again at 6:30 when I left for work. Got home around 12:30 and took it off the grill. Wasn't opened between 6:30 and 12:30. Butts were hard to remove from grill because they kept trying to fall apart!
The lump was still even with the top of the fireBOX. Lots of unused lump!
BTW, the BGE external dome temp stayed around 275-300* (recently calibrated).
I did put my Maverick probe into the second butt, just to make sure they both finished around the same time. One was 205 and the other 207 when I took them off.

I am not cooking with the Digi q is it better to be a little low on the temp overnight or just set it at 225 and hope?
